Pound Cake



  • 3 cups + 3⁄4 cups all-purpose flour
  • 9 whole eggs
  • 1 cup + 2 Tbsp Elixir Stevia Baking Blend
  • 4 sticks butter, unsalted, softened
  • 1⁄2 tsp vanilla extract


  • Assemble all ingredients.
  • Let butter and eggs warm to room temperature.
  • Spray 2 bread pans (8 x 4 x 3) generously with non-stick cooking spray and then set aside.
  • Beat butter in a bowl on medium for 1 minute until fluffy. Slowly add Elixir Stevia Baking Blend and beat for another 6 minutes.
  • Whisk eggs and flour together in a small bowl.
  • Add the eggs and flour mixture to the Stevia Baking Blend and butter in three portions, mixing between additions.
  • Scrape down sides, add vanilla extract and mix.
  • Pour the batter into the 2 bread pans and smooth the surface with a spatula or back of a spoon.
  • Place the pans in a cold oven and set the temperature to 275°F. Bake for 30 minutes, rotate pans, and increase temperature to 350°F. Bake an additional 30 minutes or until a toothpick inserted in the center comes out clean.
  • Remove from oven and cool on wire rack for 15 minutes. Remove from pans and finish cooling.
